Why God Won't Go Away: Brain Science and the Biology of Belief, by Andrew Newberg, Eugene D'Aquili, and Vince Rause.

The Belief Instinct, by Jesse Bering.

Six Impossible Things Before Breakfast: The Evolutionary Origins of Belief, by Lewis Wolpert.

Valerie Tarico's chapter in The Christian Delusion is an excellent introduction to this whole subject.
